Overview

This diploma level course requires students to complete 10 WSQ Competency Units and attain 30 credits.

Best practices, strategic thinking and challenging the status quo will be incorporated into each of the units you will be studying.

These critical food & beverage and business management skills can be used in a variety of global commercial roles - in the Food & Beverage industry in Singapore and indeed the global Tourism & Hospitality industry and other service related sectors.

This skill describes the ability to conduct orientations, plan training sessions, conduct and evaluate trainings.

FSS-CEX-5002-1.1 Maintain Service Quality and Professional Etiquette
This skill describes the ability to apply the service mindset and practical concepts on service quality, based on leadership, strategy, people, process and measurement. It also includes providing excellent service to customers

FSS-FIN-6002-1.1 Develop and Implement Budgets
This skill describes the ability to develop and implement budgets. It also includes managing accounting and cash controls and auditing financial procedures.

FSS-SNM-6001-1.1 Optimise Sales
This skill describes the ability to optimise sales. It also includes directing staff to maximise sales, analysing and monitoring sales and applying yield management principles.

FSS-PNI-5001-1.1 Administer Purchasing and Receiving Procedures
This skill describes the ability to administer purchasing and receiving procedures. It also includes implementing purchasing and receiving procedures

FSS-FBS-5011-1.1 Manage Customer Services
This skill describes the ability to enhance service standards, maintain and improve customer service systems, initiate training programmes and ensure that service standards are implemented.

FSS-FBP-5015-1.1 Manage Food and Beverage Operations
This skill describes the ability to manage Food and Beverage (F&B) operations. It also includes applying knowledge of various food and beverage outlet concepts, planning employee schedules to match business demands, managing opening, operating and closing procedures, administering purchasing and inventory systems, interviewing, hiring and training staff and developing food and beverage operating budgets.

This skill describes the ability to standardise recipes, use yield calculations for purchase decisions, determine direct material cost and monitor product quality

This skill describes the ability to prepare and conduct performance appraisals, develop personal development plans and manage performance outcomes.

SVCF-SI-502C-1 Innovate the Customer Experience
This skill describes the ability to identify the elements that forms customer expectations so as to provide the desired customer experience that is line with the organisation’s vision, mission and values. It also includes various methods to design, innovate and translate the desired customer experience into a service operations plan.

Target Audience

This qualification provides a pathway to work in any hospitality industry sector as a departmental or small business manager. The diversity of employers includes restaurants, hotels, motels, cruise, catering operations, event venues, clubs, pubs, cafés and fast food chains. This qualification allows for multiskilling and for specialisation in accommodation services, cookery (with additional cookery qualifications), food and beverage and gaming.

Entry Requirement

William Angliss Institute accepts students on the basis of their demonstrated capacity to succeed and who meet the minimum requirements for the level of study and qualification being undertaken.
Entry requirements include:

  • Academic requirements - Admission is on the basis of academic merit where students have completed a GCSE N/O levels with at least 3 passes.
  • Industry experience - where possible, or in the absence of suitable academic requirements, students with a demonstrated attitude, skills and knowledge, developed through industry experience of 2 years may be suitable. Industries include Tourism, Hospitality, Food and Beverage, Catering Services.
  • English language proficiency - students must have a good command of written and spoken English, Their English language proficiency must meet international language standards for entry into Diploma qualifications. E.g. IELTS (Academic Module overall 5.5, no band below 5.0) or GCSE N/O Levels pass in English.
  • Suitability to industry demonstrated through attitude and knowledge of Tourism, Hospitality, Food and Beverage or Catering Services industries.
  • Interest and passion in the Tourism, Hospitality, Food and Beverage or Catering Services industry.

Eligibility
Singapore Citizens, Permanent Residents and International Students are eligible to apply for the WSQ Specialist Diploma in Food Services (Food & Beverage Service).

Assessment
Competency Based Assessment for this qualification may include Practical Performance, Role Plays, Oral Questioning, Workplace Observation, and Written Questions, Industry Research Projects and e-learning assessments or feedback from workplace supervisors.

Course Completion Criteria

Attendance for WSQ Courses

  • Student Pass Holders are required to maintain a class attendance of 90% and above as per Immigration & Checkpoints Authority of Singapore (ICA) requirements.
  • Singapore Citizens, Permanent Residents and International students holding a DP/LTVP are required to maintain a class attendance of 75% and above.

Unit Competency

  • Achieve 'Competent' for all units

Certification
Upon successful completion of the programme, trainee will receive a WSQ Specialist Diploma in Food Services (Food & Beverage Service).

Articulation
Graduates of the WSQ Specialist Diploma in Food Services (Food & Beverage Service) may wish to apply for William Angliss Institute’s Higher Education program in Singapore or Australia upon completion.
